        • Bean Sprouts
          with Salted Fish

          Ingredients :

        • 1 big plateful of mung bean sprouts (you can choose to remove the roots or just leave it)
        • 1 tsp garllic (minced)
        • 1 tbsp salted mackerel fish (cut into small pieces and pre-fried)
        • 1 tbsp dried sole fish (cut into small pieces and pre-fried)
        • 1 tbsp dried mini anchovies (pre-fried)
        • 1 red chilli (sliced)
        • 1 stalk green onions (cut into 2″ lengths)
        • 1 tbsp oyster sauce
        • 2-3 tbsp water (optional. Used only if the bean sprouts appear too dry during the stir frying)
      • How to cook:

        • Heat up 2 tbsp oil in a wok. When oil is hot enough, add garlic, salted fish, dried sole fish, dried mini anchovies,  slice red chilli and stir fry until fragrant
        • Add mung bean sprouts, green onions and oyster sauce and mix well. Stir fry for about 3 minutes or until bean sprouts soften a little (depend on the crunchiness level you want. I like mine crunchy.)
        • Add some water if the dish looks dry. Mix well and serve.

        Mung beans: green gram / gloden gram
        Anchovy: A small, herringlike marine fish of the family Engraulidae, especially the European fish.

        • Saute shrimps
          with sesame

          Ingredients :

        • 450g fresh shrimp meat
        • Green cabbage hearts
        • Fried sesame, salad sauce
        • An egg white
        • Water chestnut powder
      • How to cook:

        1. Coat the fresh shrimp meat with the water chestnut powder, then clean it with water and dry it with dry towels.
        2. After the above step, dust it with water chestnut powder, and saute it to be done, and then add the salad sauce.
        3. Braise the green cabbage hearts to be done, circle the dish with them and sprinkle the fried sesame on them.
        • Chinese White Gourd Soup with Dried
          Shrimps

          Ingredients :

        • 9 oz (250 g) white gourd
        • 1 cup (250 ml) high stock
        • 1 tbsp dried shrimps, soaked
        • 3/4 tsp salt
        • 1/4 tsp scallions chopped
        • 2 tsp sesame oil
        • 1/4 tsp MSG
      • How to cook:

        1. Cut white gourd into 2 inch by 2 inch by 1/4 inch (5 cm by 5 cm by 7 mm) slices.
        2. Bring the high stock to a boil and add the white gourd slices, shrimps and salt. Simmer for 20 minutes, or until the white gourd is cooked. Sprinkle with the scallions, MSG, and sesame oil. Remove and serve.

        Reference: White gourd is a pumpkin-like and tendril-bearing Asiatic vine. Known here for its ornamental fruit; in China it is the source of the Chinese preserving melon.

        Scallion is an onion taken from the ground before the bulb has formed; eaten in salads.
